Recipe 1 – Radish flatbread

What: A spicy yet flavourful flatbread made with grated or finely chopped radish. It is very similar to the naan or chapati, however, it is packed with nutrients and vitamins. If you are health conscious and are looking for healthy alternatives, then radishes are a good thing to incorporate in your diet.

Ingredients

  1. 2 cups wheat flour
  2. 1 tsp salt
  3. 1/2 cup olive oil
  4. 300 gm fresh radish, finely chopped
  5. 300 ml water, add more if required
  6. 1 tsp cumin seeds
  7. 1 tsp turmeric powder
  8. 1 tsp coriander seeds

Instructions

  1. Mix flour, turmeric powder, cumin seeds, coriander seeds, salt, oil and mix well.
  2. Add water, oil and knead into a soft dough.
  3. Once the dough is soft and elastic, leave aside to rest for 20 minutes
  4. After 20 minutes, make small balls and set aside. 
  5. Take one ball, flatten, add finely chopped radish in the center. 
  6. Now roll into thin discs, not thicker than 2mm. Repeat the same for all dough balls.
  7. Roast on the griddle on the cooktop for 2 minutes on each side. Make sure not to overcook the bread.
  8. Add a dollop of clarified butter for enhanced taste.
  9. Serve with curry or just have it plain with yogurt.

Recipe 2 – Radish pickle

What: A sour and tangy mix of vegetables that is not only a healthy pick but a wholesome side dish too. While a radish may not appeal to everyone in the first go, the taste sure grows on you.

Goes best with: Pickles can be eaten as is or served as a side dish at an elaborate meal

Health benefits: Radish helps keep the digestive system functioning with the right enzymes and bacteria. It also helps increase the oxygen supply to your blood. 

Ingredients

  1. 800 gm Radish 
  2. 200 gm cauliflower
  3. 100 gm carrot
  4. 5 chopped green chili
  5. 2 tbsp lemon juice
  6. 2 tbsp salt
  7. 2 tsp red chili powder 
  8. 1 tsp turmeric powder
  9. 1 cup oil

Instructions

  1. Wash and clean all the vegetables. Make sure you dry all ingredients well.
  2. Mix the cleaned vegetables and set aside. Drain out all excess water.
  3. Now, mix red chili powder, turmeric powder, green chili, and lemon juice in a big pan. The idea is to create a nice paste. 
  4. Add vegetables to this mixture and let it sit for two days. This way you are ensuring the vegetables get all the spice.
  5. Add oil and mix it well. 
  6. The pickle is ready to eat. Store the pickle in a glass jar in a cool and dry place.

Ingredients

  1. 5-6 bulbs of fresh radish
  2. A few fresh radish leaves
  3. 2 tsp Lime juice
  4. 2 tsp Olive oil
  5. 1 tsp salt
  6. 1/2 cup black beans
  7. 1/2 cup black-eyed peas
  8. 2 tsp mint leaves
  9. 2 tsp basil leaves
  10. 4 tbsp Mixed seeds

Instructions

  1. Wash and dry all the leaves and beans. Drain out all the excess water.
  2. Make a mix of oil, lime juice, mint leaves, and basil leaves. Toss it well. 
  3. Now add beans, peas, and radish, mix it well till everything is incorporated. Make sure you have this step right to ensure a well-balanced taste.
  4. Once everything is mixed well, sprinkle radish leaves and mixed seeds.

  1. 250gm Radish, cubed
  2. 1 big onion, chopped
  3. 8 big cloves of garlic, sliced
  4. 200 ml vegetable broth
  5. 1 tsp salt
  6. 1 tbsp butter
  7. 2tbsp oil

Instructions

  1. On a cooktop, bring a big pot with oil in it to heat.
  2. Add a dollop of butter, now put in chopped onions and garlic.
  3. Once they splutter, add cubed radish and saute well.
  4. In a separate pan bring the vegetable broth to a boil. 
  5. Now add the onion, radish, and garlic mixture.
  6. Simmer the mix for 30 minutes. 
  7. Once it boils, check consistency and adjust with water.
  8. If it is too watery, add a little bit of cornflour (5gm).
  9. If it is too thick, add warm water and boil it for a few more minutes.

Ingredients

  1. 2 cups all-purpose flour
  2. 300 ml of cold water
  3. 300gm butter, cold
  4. 1 tsp salt
  5. 300 gm radish
  6. 100gm onion, sliced
  7. 2-3 cloves of garlic
  8. 100 gm tomatoes, chopped
  9. 2-3 carrots, cubed
  10. 100 gm green peas
  11. 2 potatoes, cubed
  12. 200 gm cheese

Instructions

  1. To make the pie, mix salt in the flour and start kneading by adding cold water, add in cold butter.
  2. Knead till you have a smooth and soft dough. Refrigerate for an hour.
  3. Now roll out the ball into a flat sheet to cover your pie dish. Keep another sheet ready to top the pie. Ensure your sheets are not too thin or thick. This will impact the cooking of your pie insides.
  4. In a pan, saute, radish, garlic, onions, tomatoes, carrots, green peas, and potatoes. 
  5. Once, the mixture is soft and half done. Keep aside to cool.
  6. Now add the mixture in the pie shell. Cover it with the second sheet. You may decorate the pie top with strips or shapes of choice.
  7. Preheat oven to 200 degrees celsius. 
  8. Bake the pie for 35-45 minutes.
  9. Alternatively, you may blind bake the pie before adding the mixture to it.
  10. Tip: cover sides with foil to avoid over-browning or burning of edges.

Ingredients

  1. 6-8 Fresh radish leaves
  2. 150gm Fresh radish, cubed
  3. 100 ml of water
  4. 1 tsp salt
  5. 1 tsp sugar
  6. 1 tbsp lemon juice

Instructions

  1. Blend all the ingredients in a blender. 
  2. Once mixed, pour in a pitcher and cool for a bit.
  3. You may experiment with this juice, by adding beetroots, cucumber, or any other vegetable you prefer.

  1. 1 cup fresh radish leaves
  2. 2 cloves garlic

Instructions

  • Wash all the ingredients. Drain excess water.
  • Mix garlic and nuts in a blender. It has to be coarse and not very runny.
  • Put in leaves, cheese, and blend for a few minutes. Here ensure the consistency is paste-like. You do not want to have a runny pesto.
  •  Add olive oil and make it into a paste.

  2. 1 tsp salt
  3. 1 tsp vinegar
  4. 1 tbsp Oil

Instructions

  1. Finely slice the radish. You want to have thin slices to ensure even frying.
  2. Soak the sliced radish in vinegar and salt. 
  3. Heat oil in a pan and deep fry the chips.

  1. A loaf of bread
  2. 1/2 stick butter
  3. Finely grated radish

  5. 1/2 tbsp mustard sauce

  7. 1 tbsp mayo

Instructions

  1. Radish, chopped or cubed
  2. 1 big onion, sliced
  3. 2 tomatoes, cubed
  4. 1 tsp red chili powder
  5. 1 tsp turmeric powder
  6. 2 tbsp curry masala powder
  7. 2-3 cloves of garlic
  8. 1 tsp coriander powder

Instructions

  1. Start with sautéing sliced onions and garlic. You want to ensure the temperature is medium and not too high.
  2. Once they turn golden brown, add in tomatoes. You want to saute it well.
  3. Once the tomatoes start letting water go, add red chili powder, turmeric, curry masala, and coriander powder.
  4. Let the mixture simmer for a few minutes.
  5. Now add radish and let it cook. Ensure the radish is well done. 
  6. Add warm water and let the curry simmer for 5-7 minutes.
  7. Serve with radish flatbread.
